Courgette & Butter Bean Soup
with Black Pepper Croutons
This soup is a real winter warmer, quick and
easy to throw together, peppery and packed with goodness, pop in a flask, head outside and enjoy.
1 tsp Olive Oil
1 Large Spring Onion
1 Stick of Celery
1 Chunk, appx 2" Courgette
Half a Can of Butter Beans, drained
3 Radish, sliced
150ml Veg Stock
Pepper
For the Croutons
2 Slices of a day old crusty loaf
Olive Oil
Black Pepper
Soup
Heat the oil in a small pan, dice all your green veg and add, stirring on a gentle heat until softened, add your butter beans, stock and sliced radishes, allow to bubble gently until the beans are heated through, finish with a good grind of pepper.
Croutons
Heat your oven to 180oC Fan
Chunk you bread and spread out onto a non stick baking tray, coat but don't soak, the slightly dried, crusty bread chunks with the olive oil, give a generous grind of black pepper and pop into the pre heated oven for appx 10 minutes or until golden.
